So far so good its all running for me, I was testing a couple things and found a couple of things not in the documentation.
your@address.com is the default from address when a reminder email is sent and I can't find where to change that.
The software has a big banner at the top "Welcome to the Plans demo! (Plans version 7.6.3)" which is where I want to place my site logo, Is there any way to just remove that for now?
Please tell me I don't have to modify the whole theme (css, etc..) just to get rid of this.... |

The email address is defined in plans_config.pl.
The big banner on top is defined in /theme/plans.template. This is a single html file - hopefully editing it doesn't cause too much pain.

Very easy to add your own banner, Lane. Open the plans.template file in a text editor (I use Textwrangler for my Mac) and look for the code that contains the Welcome to Plans demo stuff. Just delete it or comment it out and add your own html text or image to customize the page.
